From Baobab Roots to Italian Dreams: Our Journey at Mastro Dario
Born in the wild heart of Phalaborwa, Brad grew up under the watchful baobabs and the untamed spirit of the bushveld. His journey led him to Jeppe High School for Boys in Johannesburg, where teamwork and determination shaped his drive.
In the vibrant hum of Johannesburg, Burn grew up in a family where the kitchen was the heart of the home. Weekends were spent cooking recipes from all over the world—each meal an adventure that ignited her lifelong passion for food and flavour.
Their paths crossed in 2015, two entrepreneurs, four children, and a shared love for travel, nature, and great food. In 2017, they welcomed a vivacious little boy into their blended family and now the circle was complete.
In 2025, a family health scare brought them to the Garden Route. What began as a visit to Brad’s mom became a divine detour. A chance discovery of The Deli at Mastro Dario in George, an Italian gem filled with warmth, flavour, and inspiration.
With deep gratitude to God, Brad’s bushveld grit met Burn’s global love for cooking, and their dream took shape. Today, as proud new owners, they’re blending South African soul with Italian passion.
The Deli at Mastro Dario is more than a deli; it’s a place where stories are shared and flavours connect cultures. Come join us. Benvenuti at Mastro Dario, your table is ready!
Our History
nestled in the changing climate of South Africa, Dario Soresi and Bruno Battaini began a bold experiment: crafting authentic Italian salami without compromise. Where others turned to chemical preservatives and shortcuts, Dario chose purity. No nitrites. No artificial smoke. Just time, tradition, and natural fermentation.
With the help of Italian master salami makers, known as Norcini and a deep respect for heritage, they built a production rooted in the best of Italy’s techniques. Their meats matured slowly in cold rooms, wrapped in their own natural yeasts, developing the kind of flavour that evokes memories of old-world kitchens and family feasts.
Dario’s guiding principle was simple: “When I offer salami to my granddaughters, I know they eat genuine, not carcinogenic food.” That commitment extended to sourcing, partnering with Van Rensburg Meat in George, a closed-circuit farm free from hormones, antibiotics, and stress-induced meat alterations.
From classic Coppa and Pancetta Tesa to adventurous game salamis made with Springbok, Zebra, or Wild Boar, every product reflects a balance of boldness and restraint. Even the Salsiccia and Cotechini are crafted to preserve natural flavour, not mask it.
In 2005, Maurizio joined the journey, tracing the Outeniqua mountain road to meet the creators of these tastes. His passion for origin stories. Born in Tuscany’s Fierucola Markets, helped bring Mastro Dario’s cold meats to tables across South Africa.
Today, The Deli at Mastro Dario continues that legacy. We may not share our recipes, but we’ll always share our flavours and the mountain air that makes them unforgettable.
